Chilled Pork Shabu-Shabu Salad

  1. Finely julienne the cucumber, carrots, and lettuce.
  2. Julienne the shiso leaves, soak in water, and drain.
  3. Cut the mini tomatoes into 2-4 pieces each.
  4. Pour the sake in boiling water and boil the pork slices one at a time.
  5. Once boiled, transfer to a bowl of ice water and drain.
  6. Transfer the vegetables to a plate and top with the boiled meat.
  7. Garnish with the shiso leaves.
  8. Grind the sesame seeds and mix with the umeboshi.
  9. Mix with the other seasoning ingredients.
