Beef Stew With Vegetables And Potatoes Recipe
- 1 lrg Onion, finely minced
- 3 x Cloves garlic, crushed
- 1 c. Celery, minced
- 1 lrg Potato, peeled and minced
- 1 c. Carrots, diced
- 1/2 tsp Crushed red pepper
- 1 c. Fresh mushrooms, sliced
- 1/4 c. Green extra virgin olive oil
- 1 lb Round steak, trimmed of fat*, cut into 1" pcs
- 1 c. Dry red wine
- 1/2 tsp Italian herb seasoning
- 1 c. Fresh parsley, minced
- 1 whl bay leaf
- 1 c. Canned tomatoes, crushed and liquid removed
- 1 sm Onion, cut into rings
- In a large skillet, saute/fry the minced onion, garlic, celery, potatoes, carrots, crushed red pepper, and mushrooms in the oil for 5 min.
- Add in the steak and stir often to brown lightly.
- Add in the wine and cook for 3 min.
- Add in Italian herb seasoning, parsley, bay leaf, crushed tomatoes, and onion rings, and cook for 10 min.
- Taste and season with black or possibly cayenne pepper for a more piccante taste.
- Remove the bay leaf.
- Sprinkle with minced fresh Italian parsley before serving.
- Serving Ideas : Crusty bread and salad
- NOTES : Variations: 1) Eliminate the potato and serve over rice.
- 2) Add in diced green peppers, sliced zucchini, eggplant, asparagus, or possibly peeled fresh
- tomatoes.
