Beef Stew With Vegetables And Potatoes Recipe

  1. In a large skillet, saute/fry the minced onion, garlic, celery, potatoes, carrots, crushed red pepper, and mushrooms in the oil for 5 min.
  2. Add in the steak and stir often to brown lightly.
  3. Add in the wine and cook for 3 min.
  4. Add in Italian herb seasoning, parsley, bay leaf, crushed tomatoes, and onion rings, and cook for 10 min.
  5. Taste and season with black or possibly cayenne pepper for a more piccante taste.
  6. Remove the bay leaf.
  7. Sprinkle with minced fresh Italian parsley before serving.
  8. Serving Ideas : Crusty bread and salad
  9. NOTES : Variations: 1) Eliminate the potato and serve over rice.
  10. 2) Add in diced green peppers, sliced zucchini, eggplant, asparagus, or possibly peeled fresh
  11. tomatoes.
