Macaronia me Voutyro (Pasta with Brown Butter Sauce)

  1. Fill a large deep pot 3/4 full with water.
  2. Add salt and bring to a rolling boil.
  3. Add pasta slowly, without breaking the boil.
  4. Cook 10 minutes.
  5. Place a colander in sink and turn pasta into it.
  6. Rinse under hot running water, allowing the water to drain through the spaghetti.
  7. Heat the butter in a small saucepan to a honey brown.
  8. Watch it carefully for these minutes; it burns quickly and suddenly.
  9. Return spaghetti to large pot and dribble hot butter over it.
  10. Sprinkle with half the cheese and toss gently to mix.
  11. Transfer to a large ovenproof platter, sprinkle top with more cheese and bake for 10 minutes at 350F.
  12. Serve hot.
