Crockpot Pork Loin Green Chili
- 5 can green chili
- 1 cup onion
- 1 can rotel
- 2 can salsa verde
- 5 potatoes
- 2 clove fresh garlic
- 1 chili powder
- 1 adobo seasoning
- 1 salt
- 1 pepper
- 1 box chicken broth
- saute onions in oil with adobo seasoning and clove of fresh garlic
- cut pork loin into 2 inch chunks and brown in oil with garlic and seasonings.
- mix onions, rotel, green chilies, and salsa Verde into crackpot and stir well
- add pork into crock pot and mix
- cut and add potatoes into crock pot
- top crock pot off with as much chicken broth as it can hold and mix well
- allow to simmer in crockpot on low for 8 hours.
- serve over rice or with fresh tortillas.
