Pasta Salad

  1. Prepare ziti as label directs, using 1 tablespoon salt in water; drain.
  2. Rinse with running cold water to cool; drain.
  3. Meanwhile, cut salami, ham, and Swiss cheese into 1/4-inch-wide strips.
  4. Thinly slice escarole, discarding any tough ribs.
  5. In large bowl, stir together olive oil, vinegar, mustard, pepper, and 1 1/4 teaspoons salt until blended.
  6. Add ziti, salami, ham, Swiss cheese, escarole, and Parmesan cheese; toss to coat.
