Jalapeno Shrimp Pasta
- 1 cup olive oil
- 2 clove chopped garlic
- 5 small chopped jalapenos, save the seeds
- 1 packages cherry tomatoes, halved
- 1 packages linguine
- 1 fresh shredded parmesan cheese
- 1/4 tsp salt
- 1/2 tsp pepper
- 1 lb fresh or frozen cleaned shrimp. If frozen, thaw first.
- Heat oil in large skillet.
- Cook linguine to package instructions.
- Saute garlic, jalapenos and seeds for about one minute.
- Add clean, thawed shrimp.
- Cook until opaque, about 3 minutes.
- Add salt, pepper and halved cherry tomatoes, heat through.
- Toss linguine with shrimp mixture, make sure they're mixed well.
- Serve topped with shredded parmesan.
