Microwave Peanut Butter Pie

  1. Combine sugar, cornstarch, and salt in 1 1/2 qt. dish.
  2. Add milk gradually, mixing well. Cook, uncovered, in microwave 7-8 minutes on high, or until thick, stir occasionally.
  3. Beat a small amount of mixture into egg yolk.
  4. Return mixture to dish.
  5. Cook 2-3 minutes more, or until thick.
  6. Add vanilla and butter and stir well.
  7. Cool filling to room temperature.
  8. Mix peanut butter and powdered sugar (about 3/4 c. total) until crumbly.
  9. Layer peanut butter mix, pudding mix, repeat.
  10. Top with meringue or whipped topping.
