Microwave Peanut Butter Pie
- 1 9 pie shell, baked
- 3/4 c. sugar
- 3 heaping Tbsp. cornstarch
- 1/4 tsp. salt
- 2 c. milk
- 3 egg yolks, slightly beaten
- 1 tsp. vanilla
- 2 Tbsp. butter or oleo
- Peanut Butter
- powdered sugar
- Combine sugar, cornstarch, and salt in 1 1/2 qt. dish.
- Add milk gradually, mixing well. Cook, uncovered, in microwave 7-8 minutes on high, or until thick, stir occasionally.
- Beat a small amount of mixture into egg yolk.
- Return mixture to dish.
- Cook 2-3 minutes more, or until thick.
- Add vanilla and butter and stir well.
- Cool filling to room temperature.
- Mix peanut butter and powdered sugar (about 3/4 c. total) until crumbly.
- Layer peanut butter mix, pudding mix, repeat.
- Top with meringue or whipped topping.
