Bulgur with Curried Potatoes and Peas

  1. Bring 11/2 cups water to a boil in medium saucepan.
  2. Add bulgur; season with salt, if desired.
  3. Remove from heat, cover, and let stand 30 minutes.
  4. Meanwhile, coat large nonstick skillet with cooking spray.
  5. Heat over medium-high heat, and add potatoes.
  6. Cook 12 to 13 minutes, or until beginning to brown.
  7. Stir in ginger and curry powder, and cook 3 minutes more.
  8. Stir in frozen peas, and cook 2 minutes more, or until heated through.
  9. Toss potato mixture with bulgur in large serving bowl.
  10. Season with salt and pepper, if desired.
