Pilaf-Style Basmati Rice
- 1 tablespoon canola oil or 1 tablespoon vegetable oil or 1 tablespoon corn oil
- 3 inches piece cinnamon sticks, halved
- 2 green cardamom pods
- 2 whole cloves
- 14 cup thinly sliced onion
- 1 cup basmati rice
- 1 teaspoon table salt
- 1 12 cups water
- Heat oil in a medium saucepan until almost smoking.
- Add whole spices and cook until they pop.
- Add onions and cook until translucent, stirring frequently, about 2 minutes.
- Add rice and stir about 1 minute, until a nutty smell develops.
- Add salt and water.
- Bring to a boil, reduce heat to a simmer, cover tightly and cook until water has all been absorbed, about 17 minutes.
- Let stand, covered, another 10 minutes.
- Fluff with fork and serve.
