Pilaf-Style Basmati Rice

  1. Heat oil in a medium saucepan until almost smoking.
  2. Add whole spices and cook until they pop.
  3. Add onions and cook until translucent, stirring frequently, about 2 minutes.
  4. Add rice and stir about 1 minute, until a nutty smell develops.
  5. Add salt and water.
  6. Bring to a boil, reduce heat to a simmer, cover tightly and cook until water has all been absorbed, about 17 minutes.
  7. Let stand, covered, another 10 minutes.
  8. Fluff with fork and serve.
