Broccoli Cheddar Mashed Potatoes
- 2 pounds potatoes, peeled, cut into 2-inch pieces
- 3 cups chopped broccoli florets
- 2 tablespoons Land O Lakes Butter
- 1/3 cup finely chopped red bell pepper
- 1 teaspoon finely chopped fresh garlic
- 1 1/2 cups shredded Cheddar cheese
- 1/2 cup sour cream
- 1/2 cup milk
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- Place potatoes in 4-quart saucepan; add enough water to cover.
- Bring to a boil; cook over medium heat 10 minutes; add broccoli florets.
- Continue cooking 5-7 minutes or until potatoes and broccoli are fork tender; drain.
- Set aside.
- Melt butter in same saucepan over medium heat until sizzling.
- Add bell pepper; cook 3 minutes.
- Add garlic; cook 1-2 minutes or until softened.
- Remove from heat.
