Chargrilled Turkish Bread Salad
- 125 g PHILADELPHIA Cream Cheese, broken into 2cm pieces
- Olive oil spray
- 1 clove garlic, crushed
- 1 tablespoon grated lemon rind Safeway 4 ct For $5.00 thru 02/09
- Cracked pepper, to taste
- 2 Turkish bread rolls, halved horizontally
- 50 g baby rocket leaves
- 1 large avocado, sliced Whole Foods 5 ea For $5.00 thru 02/09
- 1 punnet grape tomatoes, halved
- 1/4 cup balsamic vinegar
- 1/4 cup olive oil
- 1/2 teaspoon sugar
- salt and pepper, to taste
- PLACE the PHILLY on a lined baking tray.
- Spray with oil and sprinkle with garlic, lemon rind and pepper.
- Bake in a hot oven 200C for 10 minutes, until lightly browned.
- Allow to cool slightly.
- CUT each piece of bread diagonally into three slices.
- Spray the bread with oil and chargrill until golden.
- ARRANGE the bread, rocket, avocado, tomatoes and baked PHILLY on a serving platter, whisk together the vinegar, oil, sugar and seasonings and drizzle over the salad.
- Serve immediately.
- HANDY TIP: To ripen an avocado quickly store in a paper bag with a ripe banana at room temperature until avocado is soft.
