Baked Mashed Potatoes

  1. Cook potatoes.
  2. Place in a small bowl and add milk, salt and 1 TB butter.
  3. Beat until light and fluffy.
  4. Fold in egg, sour cream, cottage cheese and onion.
  5. Place in greased 1 1/2 quart baking dish (8x8 pan).
  6. Combine crushed crackers and 1 TB butter and sprinkle on top.
  7. Bake for 20 - 30 mins at 350*.
