Chicken Chili Stew - Quick, Easy Dinner
- 1 bunch Scallions - green onions
- 4 clove Garlic
- 3 each Carrots sliced in thin rounds
- 1 cup Corn, canned, fresh, or frozen
- 1 Mushrooms - sliced (optional)
- 2 tbsp Jalapenos - pickled, jar chopped
- 2 each Chipotle peppers- jarred
- 4 each Baby potatoes quartered
- 1 1/2 tsp Salt or to taste
- 1 Pepper
- 1 tbsp Chili powder
- 2 tsp Thyme
- 1/2 tsp Cayenne powder
- 6 cup Chicken broth
- 2 each Bay leaves (optional)
- 1/2 Cooked Rotisserie Chicken cubed
- Yes, lots of ingredients, but truly easy.
- Any ingredient can be omitted.
- Dutch oven, deep pot 1 pat butter and 3 rounds olive oil.
- Saute scallion, garlic, jalapenos, chipotle, carrots, potatoes, corn.
- 4 minutes
- Salt and pepper sauteing veggies.
- Add Chili powder, Thyme, cayenne
- Poor in chicken broth.
- Bring to boil.
- Add chicken.
- Simmer for 20 minutes until potatoes are done.
