Herbed Couscous with Lemon

  1. In a kettle bring the water to a boil.
  2. Pour over the zest, thyme and couscous.
  3. Let the mixture stand, covered, for 5 minutes.
  4. Fluff it with a fork, and stir in the parsley, oil, lemon juice, and salt and pepper.
