Herbed Couscous with Lemon
- 1 1/2 cups water
- 1/2 teaspoon freshly grated lemon zest
- 1/2 teaspoon dried thyme
- 1 cup couscous
- 1/2 cup packed fresh parsley leaves, minced
- 2 tablespoons olive oil
- Fresh lemon juice, to taste
- Salt and pepper, to taste
- In a kettle bring the water to a boil.
- Pour over the zest, thyme and couscous.
- Let the mixture stand, covered, for 5 minutes.
- Fluff it with a fork, and stir in the parsley, oil, lemon juice, and salt and pepper.
