Bacon Peach Pinwheels

  1. In a small bowl mix cheeses.
  2. Set aside.
  3. In a large skillet cook bacon until crisp; drain and crumble.
  4. Reserve 1 Tablespoon drippings in skillet (drain the rest); then, cook and stir onion in drippings over medium heat until tender.
  5. Remove pan from heat; stir in preserves, dried basil and vinegar.
  6. Set aside.
  7. Unroll dough and press 2 triangles together at seam to create a rectangle.
  8. On each rectangle spread a third of the cheese mixture to within 1/4 of one long side.
  9. Spread preserve mixture over cheese.
  10. Top with bacon and pecans.
  11. Beginning at a long side roll up each rectangle.
  12. Press seams to seal.
  13. With a serrated knife cut each roll in slices.
  14. place cut side down on baking sheet.
  15. I put parchment paper down or spray the pan with Pam first.
  16. Bake in a 375 degree F oven for 15 to 18 minutes or until golden brown.
  17. Serve warm.
  18. Top with blue cheese crumbles and chopped green onions if desired.
