Coconut Ice Pops

  1. In a saucepan over medium-low heat, melt sugar in water, stirring until smooth.
  2. Stir in coconut milk; increase heat to high and bring to a boil, stirring.
  3. Reduce heat to medium-low and simmer for 1 minute.
  4. Set aside to cool.
  5. Pour into molds and freeze until slushy, then insert sticks and freeze until solid, for at least 4 hours.
  6. If you are using an ice pop kit, follow the manufacturers instructions.
  7. dan (pandanus) leaf to the coconut mixture before bringing it to a boil (double leaf over lengthwise and tie it in a knot).
  8. Simmer and let steep, covered, for 10 minutes.
  9. Remove leaf and set aside to cool.
