Awesome Breakfast Casserole For Two
- 1/2 pound hash brown potatoes frozen
- 4 ounces italian sausage removed from casing
- 2 large eggs
- 1/2 cup onions diced
- 1 ounce cheddar cheese shredded
- 5 ounces soup, cream of potato 1/3 to 1/2 of a can, we use leftover homemade soup
- 1 x salt and black pepper to taste
- Cook the hash browns with the onion until crisp.
- Add the bacon or sausage and cook until just beginning to brown, drain off any excess fat (if any).
- Remove from heat, add the soup, cheese, beaten eggs and black pepper to taste.
- (No need to add salt as the soup, bacon or sausage will have more than enough seasoning)
- Transfer the mixture to a suitably sized oval baking dish.
- Top with a bit of cheese if desired.
- Bake for 30 in a 350F (180C) F oven.
- Allow to rest about 5 minutes before serving.
