Chocolate Chip Cookie Bars
- 1 cup unsalted butter, softened, plus more for pans
- 1 12 cups flour, plus more for pans
- 1 12 cups brown sugar, firmly packed
- 1 teaspoon vanilla
- 2 eggs
- 2 cups quick-cooking oats
- 12 teaspoon salt
- 12 teaspoon baking soda
- 1 (12 ounce) bag chocolate chips
- Heat oven to 350F Coat 2 eight inch square pans with butter, then with flour and set aside.
- Place the butter and brown sugar in a mixing bowl, and beat until creamy.
- Add the vanilla and eggs, and mix until well combined.
- Stir in the chocolate chips.
- Combine the dry ingredients together.
- Mix.
- Blend with the butter mixture.
- Divide the dough between two prepared pans and flatten the dough, pressing it to the edge with a rubber spatula.
- Bake until golden brown and set in the center, about 35 minutes, rotating pans halfway through cooking time.
- Place the pans on wire rack to cool.
- Once cool, remove from pan, and cut in half to form two 4x8 - inch rectangles.
- Cut each rectangle into six inch long bars.
