Buffalo-Blue Cheese Roasted Taters
- 3 lb red potatoes; quartered
- 2 packages dried ranch seasoning
- 2 tsp ground celery seed
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp dried oregano
- 1 tsp dried thyme leaves
- 1 tsp ground white pepper
- 1 cup blue cheese crumbles
- 2/3 cup buffalo sauce
- 1 pinch salt
- 1 vegetable oil; as needed
- Toss potatoes with enough oil to cover.
- Season with dried spices and ranch seasoning.
- Toss.
- Roast at 400 for approximately 40-45 minutes or until potatoes are caramelized and fork tender.
- Shake baking tray a few times during cooking to move around potatoes for more even caramelization.
- Place potatoes in a large mixing bowl.
- Add buffalo sauce.
- Toss.
- Add blue cheese.
- Toss.
- Garnish with a few crumbles.
