Chocolate Zucchini Loaf/Cake
- 1/2 cup margarine softened, or butter
- 1/2 cup canola oil
- 1 cup sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup sour milk
- 1/2 tablespoon baking powder
- 1 tablespoon baking soda
- 2 1/2 cups whole wheat flour
- 4 tablespoons cocoa powder
- 1/2 tablespoon cinnamon
- 1/2 tablespoon cloves, ground
- 1/2 cup walnuts or any other kind of nuts
- 3/4 cup chocolate chips (semi-sweet)
- 2 cups zucchini shredded
- Preheat oven to 350F (180C).
- Cream together first 3 ingredients.
- Add eggs, vanilla and sour milk.
- Add dry ingredients in order.
- Stir in zucchini, chocolate chips and nuts (if using).
- Pour equally into two greased loaf pans.
- Bake for one hour and the edges are dark and theirs a split down the middle.
