Broiled Shad with Thyme

  1. Heat the broiler.
  2. Lightly oil a broiler pan or baking sheet.
  3. Put the fish in the pan and rub the surface with the oil.
  4. Sprinkle with the chopped or dried thyme, the salt, and pepper.
  5. Dot with the butter.
  6. Broil the fish until golden brown and just done, about 4 minutes for 3/4-inch-thick fillets.
  7. Decorate with the thyme sprigs, if using.
  8. Serve with the lemon wedges.
