A Penne For Your Thoughts Recipe
- 1 c. sun-dry tomatoes
- 3 c. sliced mushrooms
- 12 ounce pasta penne
- 4 slc turkey bacon cut in 1" pcs
- 3 x cloves garlic chopped
- 1 c. red onion sliced
- 2 c. minced fresh spinach
- 2 Tbsp. minced fresh basil or possibly 1 tsp. dry
- 1/2 tsp crushed red pepper
- freshly grnd black pepper to taste
- 2 Tbsp. grated parmesan cheese
- 2 Tbsp. minced fresh parsley
- Pour 1 c. boiling water over sun-dry tomatoes and let soak for 5 min.
- Drain and chop.
- Set aside.
- Place mushrooms in a medium bowl with 1/4 c. water.
- Microwave on high power for 5 min.
- Drain and set aside.
- Cook penne according to package directions.
- Drain and keep hot.
- Cook bacon in a large skillet over medium-high heat till crisp.
- Add in garlic and cook 1 more minute.
- Don't throw away drippings.
- Add in onions, spinach, sun-dry tomatoes, cooked mushrooms, basil and red pepper flakes.
- Cook and stir for 4 - 5 min, till onions are tender.
- Toss bacon/vegetable mix with warm pasta till proportionately distributed.
- Divide pasta between 4 serving dishes.
- Top each with freshly grnd black pepper and 1/4 of parmesan cheese.
- Sprinkle with parsley.
- Serve immediately.
- NOTES : We had this for dinner this evening and it was marvelous.
