A Penne For Your Thoughts Recipe

  1. Pour 1 c. boiling water over sun-dry tomatoes and let soak for 5 min.
  2. Drain and chop.
  3. Set aside.
  4. Place mushrooms in a medium bowl with 1/4 c. water.
  5. Microwave on high power for 5 min.
  6. Drain and set aside.
  7. Cook penne according to package directions.
  8. Drain and keep hot.
  9. Cook bacon in a large skillet over medium-high heat till crisp.
  10. Add in garlic and cook 1 more minute.
  11. Don't throw away drippings.
  12. Add in onions, spinach, sun-dry tomatoes, cooked mushrooms, basil and red pepper flakes.
  13. Cook and stir for 4 - 5 min, till onions are tender.
  14. Toss bacon/vegetable mix with warm pasta till proportionately distributed.
  15. Divide pasta between 4 serving dishes.
  16. Top each with freshly grnd black pepper and 1/4 of parmesan cheese.
  17. Sprinkle with parsley.
  18. Serve immediately.
  19. NOTES : We had this for dinner this evening and it was marvelous.
