Mexican Pork with Vegetable Rice
- 1-1/2 cups instant white rice, uncooked
- 1/2 cup frozen whole kernel corn
- 1 env. taco seasoning mix, divided
- 1 Tbsp. finely chopped fresh cilantro
- 2 tsp. oil
- 1 lb. pork tenderloin, cut into strips Safeway 1 lb For $3.99 thru 02/09
- 1 cup each: red pepper strips, zucchini strips, onion wedges
- 1/2 cup water
- Cook rice as directed on package, adding the corn and 1 Tbsp.
- of the taco seasoning to the boiling water along with the rice.
- Stir in cilantro.
- Heat oil in large nonstick skillet on medium-high heat.
- Add pork; cook and stir 2 to 3 min.
- or until evenly browned.
- Add remaining taco seasoning, the peppers, zucchini and onions; stir in water.
- Cook 5 min.
- or until vegetables are crisp-tender, stirring occasionally.
- Serve spooned over the rice mixture.
