Luscious Passionfruit Cheesecake
- Base
- 3/4 cup sweet biscuit crumbs
- 2 tablespoons butter , melted
- 2 teaspoons lemon juice Safeway 4 ct For $5.00 thru 02/09
- Filling
- 10g low joule passionfruit jelly
- 1 cup boiling water
- 500g block PHILADELPHIA Cream Cheese, softened
- 4 medium passionfruit
- seasonal fruit, for garnish
- Combine biscuit crumbs, butter and lemon juice.
- Press into the base of a 18cm spring form pan; chill.
- Combine jelly and water and stir until jelly has dissolved.
- Cool to room temperature, do not allow to set.
- Beat Philly* until soft and smooth, add the jelly and passionfruit.
- Pour filling over base, refrigerate until set.
- Decorate with seasonal fruit.
