Whole-Grain Energy Bars

  1. preheat oven to 350. coat a 9-by-13 inch baking with cooking spray.
  2. whisk flour, cinnamon, baking soda, and salt in a medium bowl.
  3. beat peanut butter, sugar and honey in a large mixing bowl with an electric mixer until well blended.
  4. Blend eggs and egg whites in a small bowl, add to peanut butter misture, along with oil and vanilla, beat until smooth.
  5. Add flour mixture and mix with a rubber spatula.
  6. Mix in oats, dried cranberries, walnuts and butterscotch chips.
  7. Scrape into baking dish.
  8. Bake until lightly brown 20-25 minutes.
  9. Let cool in pan and cut into bars.
