spinach and pepper stuffed pork loin with parmesan potato wedges and mixed veggies
- 1 center cut pork loin
- 1 small onion diced
- 1 small red pepper sliced
- 4 slice provolone
- 4 clove garlic minced
- 1 handfull of fresh spinach
- 2 tbsp olive oil
- 1 salt, pepper
- 1 coarse grind onion and garlic
- 4 feet butchers twine
- 6 medium chefs potatoes
- 2 tbsp olive oil
- 1/2 cup grated parmesan
- 1 salt,, pepper
- 1 garlic and onion powder
- 1 Italian seasoning
- 1 bag frozen veggies or whatever you prefer
- 1/2 stick butter
- 1 salt pepper
- pre heat oven to 375
- butterfly the pork loin
- use 1tbs of olive oil and saute onion peppers and garlic
- layer the pork with spinach then provolone then sauteed onion pepper and garlic
- role pork very tightly and tie off with twine
- season top and bottom with salt,pepper,garlic and onion
- place in the center of the oven and bake until the internal temp is 160
- meanwhile wedge the potatoes place in a bowl with olive oil salt pepper garlic onion and parmesan.
- mix well
- put potatoes flat on a sheet pan and place under the pork in the oven
- relax you have a while until you have to make your veggies :)
- when the temperature of the pork is 150 start the veggies.
- plate it up and enjoy:)
