Potato Salad With Lemon, Capers, Olives, Anchovies, and Parsley

  1. Cook the potatoes whole in boiling salted water for 20-25 minutes, or until tender.
  2. Drain well.
  3. In a large bowl, mix together the olives, anchovies, capers, lemon zest and juice, parsley, and oil.
  4. Add the warm potatoes.
  5. Season, mix well and serve.
