Savory Stuffed Mangos

  1. Cut mangos in half lengthwise along flat edges of center seeds; discard seeds.
  2. Carefully scoop out fruit with a spoon, taking care not to cut through skins and leaving 1/4-inch fruit along skins.
  3. Place skins on serving dish; set aside.
  4. Finely chop fruit; set aside.
  5. Heat large skillet on medium-high heat.
  6. Add Sofrito Base and tomato paste; cook 3 min., stirring occasionally.
  7. Add meat and ham; cook 10 min.
  8. or until meat is cooked through, stirring occasionally.
  9. Gently stir in chopped fruit; cook 5 min.
  10. or until heated through, stirring occasionally.
  11. Fill mango skins evenly with meat mixture, using about 1 cup of the meat mixture for each skin.
  12. Top with sour cream just before serving.
