Rice with sausage and peppers
- 1 1/2 cup rice
- 1 green bell pepper
- 1 red bell pepper
- 1 yellow bell pepper
- 1 Spanish onion
- 1 (Optional) mushrooms
- 14 oz spicy Andouille sausages
- 1 Seasoning, I used Sazon Goya with Coriander and Annatto. Cajun seasoning too goes with this recipe.
- 1 tbsp vegetable oil
- Slice bell peppers and onion.
- Chop sausages into bite sized chunks.
- Add oil into a heated skillet.
- Saute onions until pink and add peppers.
- Saute until peppers are tender.
- In a separate skillet cook the sausage chunks until nice and brown in color.
- Add sauteed onions and peppers to it.
- Add salt and seasoning and cook everything together for a minute.
- Cook the rice separately with some salt.
- Dinner's ready in minutes!
