Cafe au Lait Bread Rolls

  1. Use a bread maker to knead.
  2. Let the dough proof at 30C until about double size.
  3. Punch the dough to release the air and divide into 5 portions.
  4. Form them into balls.
  5. Rest for 10 minutes.
  6. Using your palm, press gently to flatten.
  7. Fold the two sides in to meet in the middle, then fold in half again.
  8. Roll the portions into the shape of a coffee bean.
  9. Let them proof again, this time at 36C for 30 minutes.
  10. Sprinkle bread flour on top and cut a slit down the middle.
  11. Stuff the butter into the slits.
  12. Sprinkle with plenty of granulated sugar at the end.
  13. Bake in an oven preheated to 190C for 10-15 minutes.
