Chicken Mozzarella!!
- 4 boneless skinless chicken breasts (I cut them in half)
- 1 egg, beaten
- 34 cup Italian seasoned breadcrumbs
- 14 teaspoon paprika (optional)
- 1 (1 lb) jar alfredo sauce
- 12 cup mozzarella cheese, shredded
- 1 medium tomatoes, chopped (I used 3 small roma tomatoes!)
- 12 cup mushroom, chopped
- Preheat oven to 400 degrees.
- Dip chicken in egg, then bread crubs combined with paprika, coating well.
- In 13X9" baking dish, arrange chicken.
- Bake uncovered 20 minutes.
- Pour 1 cup Sauce over chicken (I used a little more to make sure all chicken was covered!).
- Top with cheese, tomatoes, and mushrooms.
- Sprinkle a little more cheese over the veggies!
- Bake an additional 10 minutes or until chicken is thoroughly cooked.
- Serve with remaining sauce, heated, and sprinkle, if desired, with grated Parmesan cheese!
