Green Apple And Macadamia Quinoa
- 2 cups water
- 1 cup quinoa
- 1/2 cup macadamia nuts
- 1 cup diced green apple
- 3/4 cup seeded and diced cucumber
- 1/2 cup diced green bell pepper
- 1/4 cup diced celery
- lemon, juiced
- 1 green onion, thinly sliced
- 1 clove garlic, minced
- 1 teaspoon agave nectar, or to taste
- 3/4 teaspoon flaked salt
- Bring water and quinoa to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until quinoa is tender and water has been absorbed, 15 to 20 minutes.
- Heat a small skillet over medium heat; add macadamia nuts and cook, stirring often, until toasted, 3 to 4 minutes.
- Combine quinoa, macadamia nuts, apple, cucumber, green bell pepper, celery, lemon juice, green onion, garlic, agave nectar, and salt in a bowl.
