Sweet potatoe quesadilla

• 1 Sweet potatoe or yam (I use yam). peeled
• 1/2 cup Colby cheese (or whatever cheese and amount you prefer)
• 2 flour tortillas
• pinch pepper
• pinch nutmeg
• tbsp olive oil

1. Steam sweet potatoe/yam
2. Mash with a sprinkle of cheese, pepper and nutmeg
3. Sprinkle some cheese on one tortilla and add mashed sweet potatoe/yam.
4. Sprinkle rest of cheese on top and place the other tortilla on top.
5. Press down to make sure the filling covers the inside.
6. Place on heated frying pan with a small amount of oil (I use olive oil) and fry both sides.
7. Cut and enjoy!
