Chipotle Beef Taco Bites
- 4 whole Tortillas, Cut In Wedges
- 2 teaspoons Oil
- 1 clove Garlic, Minced
- 1/2 whole Yellow Onion, Diced
- 1/2 whole Yellow Bell Pepper, Diced
- 1 pound Ground Beef
- 1 whole Canned Chipotle Peppers, Diced
- 2 teaspoons Adobo Sauce (from The Can Of Chipotle Peppers)
- 2 teaspoons Chili Powder
- 1 teaspoon Cumin
- 2 ounces, weight Shredded Monterey Jack Cheese
- 1 whole Avocado, Peeled, Pitted
- 1/2 whole Red Onion, Finely Diced
- 1 whole Lime, Juiced
- Salt To Taste
- Preheat oven to 350 F and line a baking sheet with parchment paper.
- Put tortillas onto the baking sheet in a single layer and bake for 7 minutes on each side until crisp.
- Set aside but leave the oven on.
- Heat oil in a large saucepan over medium high heat.
- Once hot, add garlic and cook 30 seconds until fragrant.
- Add onions and peppers and cook until softened, about 5 to 7 minutes.
- Add the beef and stir, cooking until completely browned.
- Stir in the chipotle pepper, adobo sauce, chili powder and cumin.
- Mix well until combined and cook an additional 5 minutes until fully cooked.
- Drain any excess grease.
- Place a spoonful of beef mixture on top of each tortilla triangle.
- Top with a sprinkle of cheese then place back on the baking sheet and bake 5 to 7 minutes until cheese is fully melted.
- While the mixture bakes, prepare guacamole.
- Mix the flesh of the avocado with the onion and lime and use the back of a fork to mash the mixture together.
- Add salt to taste.
- When the taco bites are finished baking, top with a scoop of guacamole.
