Zucchini Relish Recipe

  1. Coarsely grind the onions and peppers.
  2. Stir in zucchini and salt.
  3. Cover and allow to sit for 3 hrs.
  4. Drain and rinse well.
  5. Combine the remaining ingredients to make a syrup, boiling till sugar dissolves and mix has thickened.
  6. Add in to vegetables and cook for 20 min.
  7. Ladle into warm canning jars, adjust seals.
  8. Process in a boiling water bath for 10 min.
