Mushroom Blue Cheese Toasties

  1. Slice loaf, drizzle slices with olive oil and toast.
  2. Saute shallots in 2 Tbs.
  3. olive oil for two minutes until softened, but not colored.
  4. Add mushrooms, season and saute for 2-3 minutes until tender.
  5. Pour in wine and allow to bubble down until reduced by half.
  6. Stir in cream and herbs.
  7. Cook for a few minutes, stir in cheese and cook until melted.
  8. Spoon over toasted bread slices.
  9. Enjoy!
