Mushroom Blue Cheese Toasties
- 1 loaf French Bread
- 2 bulbs Shallots, Finely Chopped
- Olive Oil
- 12 ounces, fluid Mushrooms (shiitake And/or Portobello Work Well)
- Salt And Pepper, to taste
- 1/2 cups White Wine (or A Water/vinegar Solution)
- 1/2 cups Cream
- 1- 1/2 Tablespoon Mixed Fresh Herbs (chives, Basil, Etc.)
- 4 ounces, fluid Blue Cheese, Crumbled
- Slice loaf, drizzle slices with olive oil and toast.
- Saute shallots in 2 Tbs.
- olive oil for two minutes until softened, but not colored.
- Add mushrooms, season and saute for 2-3 minutes until tender.
- Pour in wine and allow to bubble down until reduced by half.
- Stir in cream and herbs.
- Cook for a few minutes, stir in cheese and cook until melted.
- Spoon over toasted bread slices.
- Enjoy!
