Turkey Soup
- 1 turkey carcass
- 4 teaspoons salt
- 1 cup carrot, grated
- 2 chicken bouillon cubes
- 1 cup celery, chopped
- 1 cup onion, chopped
- 28 ounces tomatoes, chopped
- 4 tablespoons pot barley
- 14 cup lentils
- 2 tablespoons rice
- 14 cup parsley
- 3 cups turkey, chopped
- Place carcass and salt in large pot.
- Cover with 18 cups of cold water.
- Simmer 5 hours.
- Strain and discard bones.
- Refrigerate both overnight.
- Skim fat off.
- Add remaining ingredients.
- Simmer 2 to 3 hours.
