Turkey Soup

  1. Place carcass and salt in large pot.
  2. Cover with 18 cups of cold water.
  3. Simmer 5 hours.
  4. Strain and discard bones.
  5. Refrigerate both overnight.
  6. Skim fat off.
  7. Add remaining ingredients.
  8. Simmer 2 to 3 hours.
