Grilled Steak With Green Onion and Goat Cheese Topping
- 8 green onions
- 1 tablespoon olive oil, divided
- 1 cup goat cheese, crumbled
- 12 cup provencal pesto sauce
- 1 -2 teaspoon pepper
- 8 sterling silver top serloin grilling medallion steaks
- 1 teaspoon salt
- Heat barbecue to high.
- Coat green onions with 1 teaspoons olive oil and grill about 1 minute per side or until lightly charred, Cool and finely chop.
- In a bowl, mix cheese, pesto, pepper and green onion, Set aside.
- Brush both sides of the steaks with the remaining olive oil and season with salt.
- Grill over medium-high heat for 1-2 minutes, just until grill marks form.
- Turn to sear the other side.
- Move steaks away from the hottest part of the grill and continue cooking about 7 minutes for medium (160F on insta-read thermometer).
- Remove steaks from grill and let rest 5-10 minutes before serving.
- Top with 1-2 tablespoons of the cheese mixture and serve.
