Easy Cantaloupe Salsa
- 1/2 whole Cantaloupe (4 Cups), Rind Removed And Diced
- 4 whole Jalapenos Diced
- 1/2 whole Red Onion, Diced
- 1/2 whole Yellow Or Green Pepper, Diced
- 29 ounces, weight Canned Petite Cut Tomatoes
- 1/2 cups Chopped Fresh Cilantro
- 2 cloves Garlic, Minced
- 2 Tablespoons Lemon Juice
- 2 Tablespoons Lime Juice
- Salt And Pepper
- Olive Oil
- Chips (the Scoop Kind Are Great!)

- Mix all ingredients (except the chips and oil) in a medium glass or ceramic bowl.

- Add olive oil until salsa is juicy, or to your taste.
- 3.
- Add salt and pepper to taste.
- 4.
- It is okay to eat right away, but if you let it sit covered in the fridge for an hour or two, the flavors will meld and be more delicious!
- Serve with chips.
