Spicy Beef And Vegetables
- 1 lb. beef top round steak
- 3 Tbsp. vegetable oil
- 2 medium onions, sliced
- 1 medium green pepper, cut in strips
- 1 medium red pepper, cut in strips
- 1/4 lb. mushrooms, cut in quarters
- 1 large garlic clove, crushed
- 3/4 tsp. salt
- 1/2 c. creamy or chunky peanut butter
- 6 Tbsp. soy sauce
- 1/4 tsp. crushed red pepper flakes
- 1/2 c. water
- hot cooked white rice
- Cut beef across the grain into thin strips.
- Heat 2 tablespoons oil in 10-inch skillet over medium heat; add onions, pepper, mushrooms, garlic and salt and cook, stirring occasionally, 10 minutes until vegetables are tender.
- With a slotted spoon, remove vegetables to bowl.
- Add remaining tablespoon oil to skillet; add beef and cook over medium-high heat, stirring frequently, about 3 minutes, until browned.
- Add peanut butter, 1/2 cup water, soy sauce, crushed red pepper flakes and vegetables.
- Stir until mixture is blended and heated through. Makes 4 servings.
