Spicy Beef And Vegetables

  1. Cut beef across the grain into thin strips.
  2. Heat 2 tablespoons oil in 10-inch skillet over medium heat; add onions, pepper, mushrooms, garlic and salt and cook, stirring occasionally, 10 minutes until vegetables are tender.
  3. With a slotted spoon, remove vegetables to bowl.
  4. Add remaining tablespoon oil to skillet; add beef and cook over medium-high heat, stirring frequently, about 3 minutes, until browned.
  5. Add peanut butter, 1/2 cup water, soy sauce, crushed red pepper flakes and vegetables.
  6. Stir until mixture is blended and heated through. Makes 4 servings.
