Roasted Sweet Potato with Broccoli and Swiss Cheese
- 1 whole Sweet Potato
- 1 cup Chopped Broccoli, Steamed
- 1 ounce, weight Swiss Cheese
- Salt And Pepper, to taste

- Preheat oven to 425 degrees F. 2.
- Wash sweet potato(es), pat dry, and wrap in foil.
- 3.
- Place the potato(es) in the preheated oven and roast for 45-60 minutes or until soft and thoroughly cooked.
- 3.
- Unwrap the sweet potato.
- Top sweet potato with steamed chopped broccoli and Swiss cheese.
- Then heat it in the microwave or under a broiler for just a few seconds, until cheese is melted.
- Add salt and pepper to taste, optional.
