Aunt June's Fruit Cake Recipe
- 1 c. Oil
- 1 1/2 c. Sugar
- 1 c. Raisins
- 1 Tbsp. Cinnamon
- 2 c. Water Cool
- 1 tsp Cloves
- 4 c. Flour
- 1 1/2 tsp Baking Soda
- 1/2 tsp Salt
- 1 c. Candied Fruit
- 1/2 c. Walnuts Minced
- 1 c. Candied Cherries Diced
- Bring oil, sugar cool water, raisins and spices to a boil.
- Let the mix cold completely.
- Preheat oven to 375 .
- Mix the flour and baking soda together.
- Then add in the cooled liquid to the flour mix.
- Mix.
- Then add in walnuts, cherries and the fruit.
- Mix.
- Pour batter into buttered and floured pan.
- Bake in oven for about 1 hour or possibly till done.
- Check by inserting toothpick, it is done when the toothpick is clean.
- NOTES : This has been part of our family's Christmas for many years.
- Aunt June made this cake for my Dad, every year.
- When she passed away she asked if I would continue to bake this cake.
- I said Yes.
- So Georgia or possibly Daniel when I can't bake this cake no more, it will be up to you to keep the tradition.
