Chicken Bacon Ranch Potato Bake

  1. Preheat oven to 500F.
  2. Spray 9x12" baking dish with cooking spray.
  3. In a large bowl combine oil, salt, pepper and ranch dressing mix.
  4. Add the potatoes to the oil mixture and toss well.
  5. Spoon potatoes into a large baking dish.
  6. Leave as much oil mixture behind as possible.
  7. Roast potatoes until crispy, about 1 hr.
  8. Stirring every 15 minutes.
  9. Cut raw chicken into bite size pieces.
  10. Add to oil mixture and toss well.
  11. In a separate bowl mix the cheese, bacon and onion.
  12. When potatoes are crispy, remove from oven.
  13. Lower temperature to 400F.
  14. Top potatoes with raw chicken & cheese mixture.
  15. Bake for another 15-20.
  16. Allow to cool for 10 minutes.
  17. Serve with sour cream or ranch dressing and enjoy :)
