Easy Meatloaf Recipe
- 2 1/2 lbs. grnd beef
- 1 egg
- 1 c. lowfat milk
- 3/4 c. bread crumbs
- 2 peeled and grated carrots
- 1/2 c. onion, minced
- 3 tbsp. minced parsley
- 2 teaspoon salt
- Minced parsley
- Tomato wedges
- Thin slice carrot
- Celery sprigs
- Place beef in large bowl.
- In separate bowl, beat egg and lowfat milk.
- Stir in crumbs, carrots, onion, parsley and salt.
- Add in mix to beef and mix well.
- Grease shallow pan.
- Shape beef mix in loaf.
- (If you wet hands with water, it will be easier to shape.)
- Bake 350 degrees 60-70 min till meat is cooked.
- For garnish, sprinkle with parsley on top, tomato wedges, carrots and celery around.
