German Sausage and New Potato Salad

  1. Put the potatoes into a saucepan of salted water and bring to the boil.
  2. When boiling, add the stock cubes and cook over a medium heat for 10-15 minutes, until tender.
  3. Drain and cool in cold water.
  4. Drain again.
  5. Meanwhile, fry the frankfurters in the olive oil over a medium heat for 5 minutes, turning occasionally.
  6. Make the dressing for the salad.
  7. Mix all the ingredients together.
  8. Pop the potatoes into a bowl, add the scallions, frankfurters and mix with the dressing.
  9. Sprinkle with the chopped chives to serve.
