Spice is Nice Chicken Sandwich
- 2 boneless skinless chicken breasts
- 2 kaiser rolls
- 3 chipotle chiles in adobo
- 4 tablespoons mayonnaise
- 2 jalapenos, sliced
- 2 tablespoons tempura batter
- 18 teaspoon cayenne pepper
- 14 teaspoon paprika
- 14 teaspoon salt
- 14 teaspoon pepper
- 18 teaspoon onion powder
- 18 teaspoon garlic powder
- 4 slices tomatoes
- 4 leaves lettuce
- 4 slices onions
- 2 tablespoons olive oil
- 4 tablespoons vegetable oil (for frying)
- Combine cayenne, paprika, salt, pepper, onion powder, and garlic powder in a small bowl.
- Sprinkle over chicken breasts making sure to rub spice mixture in to the chicken.
- Let sit for 5-10 minute.
- Slice the 3 chilies in adobo sauce and add to the mayonnaise in a small bowl and stir to combine.
- Refrigerate until ready to use.
- Begin to heat olive oil in large skillet.
- Once olive oil is hot add chicken and saute from 5-7 min each side.
- While the chicken is cooking, mix together the tempura batter then add the sliced jalapenos and set aside.
- Begin to heat vegetable oil in a small skillet, once oil reaches approximately 300 degrees* add the tempura battered jalapenos and fry for about 3-4 minutes, or until golden brown.
- Remove from oil and rest of a paper towel.
- *Note: if you don't have a thermometer for the oil, simply let the oil heat over medium heat for about 5 minutes that should bring you to the perfect temperature.
- Once the chicken has completed its cooking process.
- It is now time to assemble the sandwiches.
- Slice the kaiser roll in half and place 1/2 of the mayonnaise mixture on each of the respectable rolls.
- Place chicken on roll and top with tempura jalapenos, lettuce, tomato, and onions.
