Italian Vinaigrette

• 2 tablespoons red-wine vinegar
• 1/2 teaspoon salt
• 1/8 teaspoon black pepper
• 5 tablespoons extra-virgin olive oil

1. Whisk together vinegar, salt, and pepper in a bowl, then add oil in a slow stream, whisking until emulsified.
