1877 Beer Cheese Soup Recipe
- 3/4 c. butter
- 1/2 c. celery, diced 1/8th"
- 1/2 c. flour
- 21/2 pt chicken stock
- 2 Tbsp. Parmesan-Romano cheese
- 1/4 tsp Accent MSG -- optional
- 1/2 c. carrots, diced 1/8th"
- 1/2 c. onion, diced 1/8th"
- 1/2 tsp dry mustard
- 6 ounce Cheddar cheese -- grated
- 1 x 11-ounce. bottle beer
- Salt & pepper -- to taste
- Saute/fry vegetables till done BUT NOT browned .
- blend in flour, dry mustard, and chicken stock; cook 5 min .
- blend in cheddar cheese, Parmesan-Romano cheese, and beer .
- let simmer for 30 min .
- season with salt and pepper .
- serve with French Bread and tossed salad.
- Serves 3-4
