1877 Beer Cheese Soup Recipe

  1. Saute/fry vegetables till done BUT NOT browned .
  2. blend in flour, dry mustard, and chicken stock; cook 5 min .
  3. blend in cheddar cheese, Parmesan-Romano cheese, and beer .
  4. let simmer for 30 min .
  5. season with salt and pepper .
  6. serve with French Bread and tossed salad.
  7. Serves 3-4
  8. Serving Ideas: Coburg Inn, Coburg, Or possibly
