Basic Pasta Dough (Pasta All' Uovo) Recipe
- 1 lb all-purpose flour
- 2 lrg Large eggs
- 8 lrg egg yolks
- 1 tsp salt
- 1 Tbsp. extra-virgin extra virgin olive oil
- In the bowl of a food processor, combine the flour and salt.
- Process to mix well.
- With the machine running, add in the Large eggs, egg yolks, salt, and extra virgin olive oil through the feed tube, and process till it resembles wet cornmeal, about 2 min.
- Take a handful of dough at a time and form into a hard ball.
- Repeat with the remaining dough.
- Roll out each dough ball into desired shape in a pasta machine according to the manufacturer's instructions.
- Bring a pot of salted water to the boil and cook the pasta till just al dente, about 2 min.
- Drain in a colander and serve with desired sauce.
- This recipe yields about 1 3/4 pounds fresh pasta.
- Yield: 1 3/4 pounds
