Vegetable Curry
- 1 can kidney beans
- 4 1/4 c. water
- 1 package fresh broccoli/cauliflower-floret mix
- 1 tsp. curry powder
- 1/4 c. chutney
- 1 1/2 tsp. grated peeled fresh ginger
- 1/4 tsp. salt
- In 4-quart saucepan, heat 4 cups of water to boiling.
- Add vegetable mix and cook 4 minutes or just until tender.
- Drain in colander.
- Dry saucepan.
- In same pan, toast curry powder on medium for 30 seconds.
- Stir in beans, chutney, remaining water, ginger, and salt.
- Cook for 2 minutes.
- Stir in broccoli mix.
- Spoon over rice.
